Grass-Fed & Grass Finished Scottish Highland Beef
Our cows, both beef animals and breeding stock, enjoy rotational grazing through various paddocks every week. This gives them constant access to new grass while improving the pasture in the process. Our cows have plenty of room to roam and are never subjected to the confines of a feedlot. We do our best to provide a completely stress-free environment for the cows. Since our beef animals are farm-slaughtered, they will never see the inside of a trailer or have to endure the stress of a stranger abusing them at a processing facility.
Grass finishing, or fattening, is the final stage in managing our beef cattle prior to processing them as beef. To produce tender, succulent beef, it is important to insure that proper nutrition is available through every stage of the animals life. Our cattle get a variety of pasture grasses and clover through the growing season. They also have free access to mineral and salt blocks. During the winter months, they are given free access to hay we produce ourselves on our own hay meadows.
Since one of the primary goals at R&R Highlands is to provide quality Grass-Fed Highland beef, it is necessary to process animals in the fall in order to make full use of the grass pastures we use to grow our cattle. By allowing the animals to graze in the finishing pasture as long as possible, we feel that the quality of the beef you purchase will be at its peak.

How much beef do you get from a cow?
The average highland steer will yield about a 500 lb hanging weight carcass. After dry-aging and butchering, you should get about 275 to 320 lbs of packaged beef. The exact amount will vary depending on how you choose to have it processed.
How much freezer space will I need for a quarter beef?
You will need 4 or 5 cubic feet of space to properly store a 1/4 beef.
What is the cost?
Beef prices for 2017 are $3.50 per lb of hanging weight for a whole beef. Price for a 1/2 beef is $3.75, and a 1/4 beef is $4.00. That means that a 1/4 beef that weighs 125 lbs on the rail will cost $500. What you come home with is a variety of cuts that weigh around 70 – 80 lbs.
So that means your net cost for the beef is around $6.90 per pound. Compare our prices to grocery store prices for factory-farmed beef and you will be pleasantly surprised. Not only are you getting AGED PREMIUM HIGHLAND GRASSFED BEEF, you are getting it at a very reasonable cost.
HOW MUCH DOES THE PROCESSING COST?
We have our beef processed at one of the few places left in Minnesota that will still age beef the right way and for the proper time. Our standard process is to allow the beef to dry-age a minimum of 14 days with an option to hang for 21 days. The aging process is crucial to a tender and full-flavored cut of beef.
Our processor comes to our farm and does the slaughter process here. While this raises the cost a small amount, it insures that our animals are never trailered to a strange place prior to slaughter, never handled by strangers, and are treated with care and respect right to the end.
The processing charge is .60 / lb of hanging weight. For a 1/4 beef that weighs , that amounts to around $75.00. This fee is payable directly to the processor. If desired, we will pick up your order and deliver to you for a small fee.
Per pound charges are set. Your actual cost will vary based upon the weight of the animal.
Can you guide me through the process of what to get?
If you choose a 1/4 beef, the cuts are as listed below. However, if you choose to purchase a 1/2 or whole beef, we would be happy to go over the cut sheet with you to insure you get exactly what you want.
For a 1/4 beef, you get the following cuts
ground beef is packaged in 1lb packages
steaks are 3/4" thick and are packaged 2 steaks per pack
